Homemade Tortilla Chips

This post isn’t rocket science but it’s something new to me that I discovered this week and thought was pretty cool! 

Last Saturday we had quite a few people round for Rich’s birthday and made a massive bowl of Mexican Mole to share with some homemade corn bread too. It took all day and although it tasted delicious, I personally think it was more hassle than it was worth. Something super easy though is homemade tortilla chips. Sometimes when you buy them in bags they can be really salty or have too much artificial flavour, which is why I like these so much. 

All you need to do is get some tortilla wraps from the supermarket, like the ones you’d use for fajitas, any will do. Then you just cut them up into lots of small triangles, lay them on a tray, cover them in olive oil and bung them in the oven until golden and crispy. 

They’re really nice and light so they work well with chunky guacamole – yum! Really easy and most of you probably already do this, but it’s new to me so I thought I’d share in case it was new to you too!
