Jojo’s Dairy-Free Chocolate Brookies

At my nephew’s 5th birthday whilst everyone else was watching him open presents, chatting with a glass of prosecco, generally doing what you do at a party… I was in the kitchen scoffing my face on these babies. My sister makes them quite frequently these days and she calls them Brownie Cookies, but I’ve renamed them Brookies and they are divine. Slightly hard on the outside like a cookie but spongie and gooey on the inside like a brownie. They are also light, dairy-free and not at all sickly. They’re just incredible… trust me! 

This recipe makes 72 Brookies (apparently!), my sister said she made a few trays worth but they didn’t last long and were eaten pretty swiftly!

Here’s what you’ll need:
85g good quality cocoa powder
400g caster sugar
125ml vegetable oil
4 eggs
2 teaspoons vanilla extract
250g plain flour
2 teaspoons baking powder
1/2 teaspoon salt
60g icing sugar

Prep: 20 min 
Cook: 12 min

  1. In a medium bowl, mix together the cocoa, caster sugar and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours (although Jojo didn’t and it still turned out amazing!)
  2. Preheat oven to 180 c/ gas mark 4. Line baking trays with parchment. Pour icing sugar onto a plate and using a metal tablespoon, spoon and roll mixture into 2.5cm balls coating each one with the icing sugar before placing onto prepared trays (Jojo found it easiest to roll them on the plate of icing sugar).
  3. Bake in preheated oven for 10-12 minutes. Let them stand on the baking tray for a minute before transferring to wire racks to cool.

  11. I am not a massive fan of sweets or chocolates, but these looks really nice. Everyone else in my family really enjoy indulging in chocolate cakes and other sweets so I think it’ll be very nice if I made them this for a special occasion. I might bake them for my brother’s birthday, which is on the 10th of Jan. He will be very happy about it. πŸ™‚

    Bake at 350 F
    1 cup good quality cocoa powder
    2 cups sugar
    1/2 cup vegetable oil

    1/2 cup powdered sugar

    I don’t know what I did wrong. After leaving the dough over night in the fridge, I tried rolling them into and ball but they seem too liquidy and fall into a pancake shape after I place them on the sheet. HELP!

  48. I just finished making these and they are my favourite thing ever.
    i halved the recipie and it made about 16/17 fairly sized ones, because i didnt need 72 cookies lying around otherwise i’d eat them all πŸ˜› may try putting chocolate chips in them next time. they’re so morish.

    made these like 4 times since she posted this,they’re so amazing everyone compliments them crazily,although the most I’ve managed to get out of them is 40, making them teeny tiny today, average sized I’ve got 30/35 so i have no idea how you’re supposed to get 72 but thats fine as we wouldn’t eat that many

    I had to make a few adjustments but they turned out delicious, I used raw cacao powder, only 150 grams of brown sugar, only one egg and 100 grams of butter instead of the oil. They turned out great but I think I will have to make them again using the original recipe, for scientific comparison reasons, of course.

    I was disappointed that these were called ‘dairy free’ but contained eggs? I substitute eggs for mashed bananas with flax seeds to bind.
