Flourless Brownie Bites

Yesterday afternoon was spent baking with my sister in preparation for a little birthday gathering we’re having for Rich tonight. I was planning on writing this post but my sister’s passion for talking about food puts me to shame so I let her take over… I feel this might be a fortnightly thing on WIHT.

Ever finished a delicious but super filling meal and got the feeling that you NEED something sweet but you just cant fit in a whole desert? That moment was my inspiration for creating these Brownie Bites. These small but perfectly delicious treats look great piled on a plate or placed on a saucer next to post dinner coffee and most importantly they satisfy that sugar sweet hit we crave after a savoury meal.
An added bonus is that there are only 4 ingredients needed, most of which you’ll already have sitting in your store cupboard at home AND as they are flourless, any friends with gluten issues will still be able to enjoy these.
TIP: Press confectionary silver, red or green balls into the top of these just as they come out the oven or nestle some cuts of holly in between the tiny blocks of chocolate goodness to convert these into a perfect festive delight.

INGREDIENTS
4 eggs (separated)
110 grams Butter
110 grams Sugar
225 grams dark chocolate
splash of Ameretto liquor (optional)
Icing sugar for dusting
TOOLS
Electric whisk (hand or machine)
8 inch Brownie tin or similar size baking tray
Sieve for dusting
RECIPE
Preheat oven to 170C/340F
Put the cubed butter and broken up chocolate into a heat proof bowl and place over a saucepan with about an inch of barely simmering water in. 

*ITS IMPORTANT THE BOWL IS NOT TOUCHING THE WATER OR ELSE THE CHOCOLATE WILL GO HARD!*

Stir the butter and chocolate every now and again until they have melted together, then remove the bowl from the pan and set aside to cool.
NOTE: If you are adding Ameretto (or another alcohol of your choice), stir it in at this point.
Next whisk together the egg yolks and sugar until they are thick and light in colour and leave a ‘ribbon trail’ when whisk is lifted.
Gently combine the chocolate and butter mixture with the yolk and sugar mix and set aside.
Whisk the egg whites to the soft peak (hold over head) stage. 
Start by folding in one dollop of egg whites to the chocolate mix, then add the rest in stages all the time folding in so as not to knock out the air.
Pour the mix into the lined tray and bake in the oven for around 30 minutes or until the centre is springy to the touch.
Let the cooked brownie mix cool before dusting with icing sugar (an ordinary sieve will do the trick) to give it that snowy Christmassy feel, then cut into bite size chunks.
